Brian Hazen Spotlights Prospect at Aspen’s Hotel Jerome

The remodel of the Hotel Jerome began a revitalization of the dining and lounge areas, and since then, the Hotel Jerome has become a culinary hot spot for hotel guests, visitors, and locals.

A hidden gem in the Jerome's lobby, the Prospect restaurant–an American bistro–has a delicious brunch menu and some of the best espresso drinks in town. The executive chef, Rob Zack, has a done a great job of making the menu interesting but approachable. I have frequented this spot just so I can continue to try different items on the menu, all have been unique and top my list of breakfast dishes. The menu changes throughout the year, keeping dining at Prospect interesting and fun. One of my current favorites on the breakfast menu is the Huevos Rancheros. I usually stick to a lighter breakfast than Huevos, but these are not to be missed. The sauce accompanies the Mexican-style dish perfectly. If you are looking for something on the healthier side, the house-made granola is also a favorite of mine. And if you are so inclined to make your own, you can find the recipe on the hotel's website along with another recipe for the pumpkin bread.

Prospect serves an extensive brunch on the weekends, but if you prefer a buffet I would suggest you arrive on the early end of the brunch hours. Otherwise the pastries and left out food can seem a bit tired. They tend to rotate what the hot food is, but you can always count on pastries, fruit, fresh juices, and usually an omelet made-to-order.

The atmosphere in the dining room compliments their higher-end breakfast offerings, and the price is typically more than a quick bite at Aspen Over Easy or Peach’s. But, it is worth the occasional splurge.
